Mac & Cheese
I was making rigatoni for dinner anyway, and then I thought to make it rigatoni & cheese. Em was game except she was really hungry, so I made a double batch, served plain rigatoni (with 'shaky cheese' for Mo, with butter for Em), then made the remaining pasta into two casseroles, one with just cheese for Em and one with Marinara sauce for me.
I had some Velveeta and shredded mozzarella, and I included some paremsan ('shaky cheese') in my marinara laced version.
For marinara, I used Scimeca's which is awfully good stuff. I felt like making my own from scratch, but this jar was already open in the fridge and I didn't want it to start growing hair (or onions).
