Coconut Milk Pancakes



Mo wanted pancakes this morning, and I started to make them, then realized I was out of milk.



But I had some coconut milk, so why not? I'd already mixed the dry ingredients.

They turned out to be excellent. They didn't really taste all that coconutty, but maybe if I'd had some shredded coconut to sprinkle on them.



Whisk together:
1-1/2 cups bread flour
2 tbsp baking powder
1/4 cup sugar
pinch of salt

beat together:

2 eggs
13.5 oz can of coconut milk
1/2 cup water
1 tsp. vanilla



Mix the wet and dry stuff quickly, and prepare the usual way: a ladle of batter into the pan, flip it when it's bubbly.



Top with butter and real maple syrup.
