This was good. Still is, actually, since I'm the only one eating it and it's enough to feed a dinner party. That's by design, it's leftovers to take to work so I don't spend money on vending machine crapola and fast food.
The crust:
2 packets yeast
1-1/2 cups warm water
2 tbsp sugar
2 cups bread flour
2 cups whole wheat flour
corn meal (to dust when rolling crust)
Knead until smooth, let rise 30 minutes.
The filling:
pesto sauce (one side of crust)
mushroom Alfredo sauce (other side of crust)
1/2 red onion, diced, sautéed until translucent
1 can medium-size black olives
shredded parmesan
shredded mozzarella
garlic powder
red pepper (to taste)
Preheat oven to 500ºF while browning the sausage and sautéing the onions. Heat the pan in the oven. Roll crust out on corn meal, spread pesto on one side and Alfredo on the other. Dust with red pepper to taste. Then spread a thin layer of shredded parmesan and mozzarella, sausage and black olives on the pesto side, topping with more of the shredded cheeses. Sprinkle garlic powder over filling. Fold crust over and crimp edges. Sprinkle top with shredded parmesan.
Transfer whole onto the heated baking sheet and bake for 10 minutes at 500ºF.
It's delicious, and if you're in a pizza rut, you can make this and pretend it wasn't just a pizza all folded up.
