Heat

Corinna and I have been experimenting with various fire sauces, and the thing is, we can't figure any of them seem hotter than the others.

We're not talking Tabasco sauce here, we're talking about stuff with habaneros as a first ingredient, sometimes sauces with ghost pepper...



I realized the likely answer is that while sauce X may bring 260,000 Scoville units and sauce Y might be a more impressive 400,000 units, maybe the threshold of perception is more like 150,000 units. If all the receptors on your tongue are getting nailed and all your neurological receptors are answering the call, maybe there's a point at which more capsicum does not equal more intensity.
